Easy Loaded Baked Potato Quiche | Easter Recipes Brunch

This potato cake loaded with potatoes is easy and full of flavor! It's the best quiche recipe easy to spend the holidays or evening dinner!

Ingredients

  • 1 1/2 cups chopped cooked ham
  • 1 1/2 cups frozen diced hash brown potatoes thawed (*see post above for making own hashbrowns)
  • 1 1/2 cups shredded Cheddar cheese
  • 1 refrigerated pie crust
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 green onions sliced (about 3 tbsp)
  • 3 slices bacon crisply cooked, crumbled
  • 3/4 cup milk
  • 5 eggs
  • Additional sliced green onions if desired
  • Sour cream if desired

Instructions

  1. Heat the oven to 350 ° F
  2. Press the base of the cake in the 9-inch cake dish and reduce the edges if desired.
  3. Sprinkle pork, wedges of potatoes, cheese and green onions in the crust. In medium bowl, whisk eggs, milk, salt and pepper until added. Pour the ingredients into the crust.
  4. Bake for 1 hour and 5 minutes until the knife in the middle comes out clean. Leave for 10-15 minutes before serving with bacon, sour cream, onion and cheese if desired.
