GUACAMOLE BREAKFAST SANDWICH RECIPE

This is an absolute breakfast sandwich. Crispy bread, buttery with eggs and bacon, guacamole and melted cheese !!

INGREDIENTS:

  • 1 cup guacamole, homemade or store-bought
  • 4 large eggs
  • 4 slices American cheese
  • 4 tablespoons unsalted butter, at room temperature
  • 8 slices bacon
  • 8 slices sourdough bread*
  • Kosher salt and freshly ground black pepper, to taste

DIRECTIONS:

  1. Heat a large skillet over medium heat. Add bacon and cook until brown and crispy, then turn once, about 3-4 minutes. Remove excess fat. Keep a large spoon in the pan. Transfer the bacon to a tissue paper dish.
  2. Add the eggs to the pan. Cook until white, but still egg yolk, about 2-3 minutes Add salt and pepper as desired. Place a slice of cheese over each egg during the last 30 seconds of cooking time; set it aside.
  3. Spread the butter on each sandwich with a butter knife. Put the bread in the pan and toasted bread, and once, until golden brown, about 2-3 minutes.
  4. To place the sandwiches together, place 4 slices of bread on the work surface. Spread with guacamole, covered with bacon, eggs, cheese and other sandwich.
  5. Service immediately.
